One reason I can tell you this meal is good is because I actually had to cook it twice for the blog. The first time I made this with tilapia, squash, onions and peppers, but my camera was out of battery. You know what they say these days: if you eat something good and don’t Instagram it, did you eat it at all?

For this round, I decided to take a more French route. I used salmon since the meat is a little sturdier, and for vegetables I included sumer squash, zucchini, tomatoes and artichoke hearts. I also tossed in some lemon and butter for flavor, but you don’t need much of each.

After cutting up the vegetables and adding some seasoning, this dish is a ridiculous breeze. You cook it in the oven, and since it’s wrapped up in a little foil packet, there is literally no cleanup beyond throwing away the tin foil. It’s actually healthy, it’s tasty and it’s too easy to not make at home.


1 lb. salmon filet

Two medium yellow squash

Two small zucchini

Four plum tomatoes

1 small jar of artichoke hearts

One lemon

Two tablespoons butter

Oil, salt and vinegar


  1. Preheat the oven to 400 degrees. Slice the large filet into two evenly-sized smaller filets. Spread two long pieces of foil, about 18 inches each, on the countertop and wipe them with a small amount of oil. Place one salmon filet on each piece of foil and season to taste with salt and pepper.
  2. Thinly slice all of the vegetables to relatively equal sizes, except the artichokes. Slice the butter into four equal pieces as well. Remove the top and bottom of the lemon, cut it half lengthwise and slice each half into even slices too.
  3. Top the salmon pieces with two pieces of butter  and half of the lemon slices each. Pile half of the vegetables on and around each piece of salmon.
  4. Fold the packets by lifting the long edges of the foil to one another over the food, then fold them together. Flip the remaining foil over the top of the packet, tightly pulling the whole thing together.
  5. Place the foil packets on an oven proof baking sheet and into the oven for 20 minutes. When you take the packets out of the oven, let them cool and be careful when you open them, since the steam can burn you. Open up your foil packet, and if you play your cards right, you won’t even have to clean your plate.
